The winter months demand hearty, nourishing meals to coat the bones and nourish the soul. I'm so thankful for the life-enhancing nutrients provided by these gorgeous animals. Just look at them!! How lucky we are as humans to consume this noble beast. Don't take it lightly! If you choose to eat meat, please, choose wisely, and savor every last morsel.

In The Kitchen...

I've been cooking up a storm this winter as it seems my two growing boys can't get enough. Three-year-old Solomon will outeat a grownup times two! They both go wild for the pork (as we eat mostly vegetarian during the warmer months) and whenever we're chowing down on this epic meat they always thank the hogs for their sacrifice. It's pretty awesome to see kids show gratitude for their food, and I applaud them for having the emotional maturity to love AND consume an animal. We don't eat grocery store meat. We eat the meat from humanely-raised animals that we love dearly. In my opinion, love is the key ingredient when it comes to really good food.

Pork Osso Buco has to be my hands-down favorite cut right now! It's fall-off-the-bone, melt-in-your-mouth DIVINE. It comes from the shank of the hog (pictured top right). It is sensational when braised. Link here for a traditional Italian recipe that is right on.

Meatballs featuring our unctuous ground pork are Solomon's favorite. I make a mean meatball loosely following this recipe (but with all pork instead of ground beef & veal). I sometimes use our epic Italian Sausage in the mix. It's got whole fennel seed and sheep's milk cheese, and just the right amount of crushed red pepper.

Rack of Pork is Percy's favorite (pictured below). It's a festive cut from the loin of the hog. Truly exquisite. We serve it for special occasions or fancy week-night dinners. It's like four or five premium pork chops in one fabulous roast. Added bonus: the meat stays more tender this way (as opposed to cooking individual chops). It's really quite easy to prepare and I'm happy to share tips!!
