Did you know:
Peas are filled with protein, fiber, Calcium, Iron and Vitamin A and C, this combination may help boost your baby’s immune system. We puree the peas with a hint of mint to create a new twist on a classic puree. The addition of mint enhances the flavor and may even help with gas.

Growing Peas

Red Fire Farm:
Pea plants like cool soil and moderate temperatures which is why they only grow well in the spring in MA.  Many years if the seeds are planted in early April, the plants will grow well all spring, but then as the pods start to ripen in mid and late June, hot 90 degree weather can cause stress on the plants and a premature end to the harvest.  This year so far the weather has been on the cool side, so the pea plants are growing well and it looks like they will have an exceptional crop.  Fresh picked peas that are eaten right off the vine are the sweetest, as the sugars quickly start converting to starch after harvest.  At Red Fire Farm, they grow the sweetest types we can find including sugarsnap and maxigolt which are both excellent tasting types.Check out Red Fire Farm in Granby, MA here

Minty Peas Soup with Cashew Crème

Recipe
1 tablespoon extra virgin olive oil
1 yellow onion, diced
2 cloves of garlic, chopped
1 ½ cups stock
3 Minty Peas Lovage Baby Blends
Pinch of sea salt & freshly cracked black pepper
¼ cup cashew crème

Directions: In a saucepan, heat oil over a medium flame and add onions and garlic. Saute for 5 minutes, until onions are soft and translucent, but not browning. Add stock and bring to a gentle boil. Reduce heat and simmer for 5 minutes. Add sea salt and pepper. Stir in Minty Peas and cook for another minute or so. Turn off flame and leave on stovetop. In a high speed blender, puree ½ cup raw cashews and ½ cup filtered water high until it resembles a thick heavy cream (you only need half of the cream, but your blender won’t be happy with less. Save the other half of the cream for a topping on fresh fruit or stirred into granola or other soup dishes). Pour some of the cream into a bowl, leaving about halfin the blender. Now add your pea soup, and briefly puree until smooth. To serve, ladle into bowls and top with a swirl of cashew crème. Makes 2-4 servings.
