As busy moms, we're always looking for those simple life hacks, right? Or maybe it's just me.
Once school starts, our easy breezy mornings go out the window.
I have one daughter who is impossible to get moving in the morning, and it seems like no matter how well we plan, we're always losing a shoe or a mitten at the last second.
Even with the chaos, I want to be the mom who makes pancakes on a Wednesday morning! But seriously, who has time to make buttermilk pancakes?
Not to mention, my kids don't need a stack of sugar any ol' morning. We reserve that for an occasional treat.
Well, I'm happy to report that I found the answer a couple years ago, and my kids have been the happy recipients of pancakes on random Wednesdays ever since :)
In fact, this super simple (healthy!) pancake recipe is so good, I tend to make it on the weekends too.

The recipe is pretty basic as written, but I often add a heaping tablespoon of peanut butter or some cacao powder to mix it up.
