Chili Cook-Off Challenge 2021

This year’s Chili Cook-Off will be televised!!

BCAN, Buckeye Broadband’s local arts channel, is producing a special Chili Cook-Off Challenge episode of their popular cooking show -- FOUR ONE NOSH. This special episode will help us raise donations for our home-delivery meal program.

The Chili Cook-Off Challenge will feature three local chefs preparing their chili and a panel of judges who will be charged with selecting a 2021 BEST CHILI WINNER. We will keep everyone posted on dates and times.

Homemade Mac & Cheese

This homemade mac and cheese recipe is creamy, and dreamy, comfort food that gets baked to cheesy, bubbly perfection in the oven. 

The recipe for Mac & Cheese that we emailed last week was incomplete. We apologize for any inconvenience.

Ingredients:

  • 1/2 lb elbow macaroni, about 1 1/2 cup(any other bite-sized pasta will work).
  • 3 tablespoons butter: salted or unsalted will work–just adjust the amount of salt you add, depending on the butter.
  • 2 tablespoons all-purpose flour
  • 1/2 tsp salt
  • 1/8 tsp ground black pepper
  • 1 1/2 milk
  • 3/4 cup half and half
  • 1 1/2 cups shredded cheddar cheese: the higher quality aged-cheddar, the better!

Instructions:

  1. Preheat the oven. Preheat to 325 degrees and lightly grease a square baking dish.
  2. Cook the macaroni. Slightly undercook your noodles (about 1 minute under al-dente). Drain and set aside.
  3. Make the roux. Melt the butter in a medium saucepan over medium heat. Blend in the flour, salt, and pepper. Cook for 2 minutes.
  4. Add milk and cheese. Stir in milk and half and half, slowly, stirring constantly. Remove from heat. Add 1 cup shredded cheese to the sauce and stir just until melted. Add the cooked macaroni noodles and toss to coat them in the sauce.
  5. Pour into baking dish. Pour half or the pasta mixture into the prepared baking dish. Sprinkle 1/2 cup cheese over the top. Pour remaining pasta over it and sprinkle with remaining cheese.
  6. Bake 15-20 minutes or until cheese is melted on top.
