I am excited to announce that we have met our latest goal of 550! Our "Fishing for 550" campaign was a smaller goal that was established in order to help increase momentum as we continue moving closer to our next big goal. 
As a way to meet with our new and existing owners (and celebrate another successful campaign) we will be holding an event at Hop & Barrel (310 2nd Street) on July 26th from 5:30 - 7:30 p.m.

Stop by to mingle with the HGC board and hear more about how we are progressing towards our plan to open a grocery co-op in Hudson! 
It is also Live Music Night at Hop & Barrel Brewing. The music starts at 7 p.m.

Co-op Farm Tour on July 14

The annual Co-op Farm Tour is a great way to visit farms who supply local co-ops with fresh produce. Save the date for the Co-op Farm Tour on July 14! Over 30 local farms will open their barn doors to the public for tours, tastings and activities. The tour is a self-guided event and free for anyone to attend. Volunteers Needed for Marketing Communications 

HGC needs your help with our marketing and communications efforts. We are looking for volunteers to write articles for the Beet newsletter, update the website blog, provide content and post updates on Facebook, and re-stock brochures at various business locations. If you enjoy event planning, we can use your help with set-up for our table displays at various community events. Any of these opportunities can be done on an ad-hoc basis that works with your schedule. We'd love to hear from you! Please contact Carol Zempel at

Volunteers Needed for RiverFest

Hudson’s annual St. Croix RiverFest celebration is set for July 17-22. HGC will be hosting an informational table during the Thursday, July 19th St. Croix Valley Community Band Concert at Lakefront Park Bandshell.
We need volunteers from 6 - 8:15 p.m., as well as set up at 5:30 and takedown. If you are available to volunteer, please get in touch with Melanie Herberg at 715-222-3032 or

Chocolate Strawberry Fool

Recipe from: Co+op, stronger together

This easy and elegant parfait makes any meal or occasion just a little more special.
2 ounces semisweet chocolate, finely chopped
2 cups sliced fresh strawberries, divided
1/4 cup sugar
1/2 teaspoon vanilla extract
1/2 cup heavy whipping cream, very cold
Place 1 cup of strawberries in a small bowl and add the sugar and vanilla extract. Mash the strawberries into small pieces using a fork. Refrigerate for 30 minutes.

Pour the cold whipping cream into a cold, medium-sized bowl. Using a beater, whip the cream until it holds stiff peaks. Fold the mashed strawberries and 3/4 of the chocolate into the whipped cream.

Using a tablespoon, fill a wide-mouth glass (such as a martini glass or tumbler) 1/3 full with the whipped cream, then top with a layer of sliced strawberries. Repeat with more whipped cream and another layer of strawberries. Top with remaining whipped cream and garnish with chocolate shavings.

Serving Suggestion
Accompany this elegant dessert with a plate of delicate shortbread cookies. Blueberries, raspberries, or pitted cherries can be used instead of the strawberries if you prefer.
