Volunteers Needed

Reindeer by the Park: we need volunteers to work 2-hour shifts at the Reindeer by the Park table on Saturday, December 3.  This event runs from 11 a.m. to 3 p.m. and volunteers are needed to help children make simple Christmas ornaments and to talk to parents about HGC. The event will be held at the Riverfront Athletic Club at 109 2nd Street.  To volunteer contact Jacki Bradham at 715-386-3826 or rbradham@pressenter.com.

Crispy Marshmallow Squares with Browned Butter

Secret Ingredient: Browned Butter (Burre Noisette).

With almost no effort, a great ingredient can be transformed into an outstanding one.   Commercial butter composition is roughly 80% milk fat, 15% water 2% milk solids.  The milk solids are what we are interested in for this exercise.  When gently simmered, the water will evaporate away leaving behind the milk fat and the milk solids at which time the milk solids will caramelize giving the butter a rich nutty taste that transforms ordinary dishes into sublime creations.

3 Tbsp. plus 1 tsp. unsalted butter
10 ½ ounces marshmallows
6 cups puffed rice cereal

In a large saucepan, melt butter over low-medium heat.  The butter will bubble, then foam. Watch carefully when the foam turns from lemon yellow color to light brown and smells nutty remove from the heat.  Add the marshmallows and stir until melted.  Return briefly to the heat if needed.  When marshmallows are completely melted and the butter is incorporated, mix in the cereal taking care to coat evenly.  Turn out into greased 9” x 13” pan and press with waxed paper or lightly oiled hands.  Let set for approx. 2 hours.

Feel free to use browned butter to add a little “something” to things like vegetables, Buttered noodles with Parmesan, baked or steamed fish, frosting, popcorn or your favorite recipe that uses butter.

Often in these Board Briefs we state that we are excited by what is going on as we grow our co-op.  But to be honest, at times the work we are involved in—committee meetings, organizing and securing our event locations, creating and producing materials, and getting an owner mailing out, are really not all that glamorous and exciting, but rather simply work that needs to be done.

But then we talk to owners, attend a training, visit a co-op, discuss issues with our consulting co-ops, and accept yet another new ownership and we remember why we are involved in the co-op and what it means.

It IS exciting that we are coming together as a community to support this enterprise!

Please continue to come along in the excitement by becoming an owner, volunteering to help on a committee or at an event, spreading the word, and joining us Wednesday November 16th for our Annual meeting.  This will be a great time to share in the excitement of growing a locally owned and supported natural food grocery—this is exciting work and we need your support.

Let’s keep the excitement alive and grow this co-op!
