Mary Morgan - HGC Owner #469

Mary is a long-time resident of Hudson. She is excited to be an owner in the Hudson Grocery Cooperative and would love to see the Co-op located in the downtown area. She likes the idea of a community-owned grocery co-op that offers locally grown and locally sourced products.
Mary has been an active participant in community and business endeavors for many years. Currently, she is hosting at the new Pedro's del Este.
Her favorite food memory is walking in the door of her childhood home and smelling her mom's delicious Shepherd's Pie. Dessert was always a part of each meal; bread pudding was a favorite.
Thanks Mary for becoming a HGC owner!

Ultimissi-Mutt Dog Wash

Ultimissimo Salon is hosting their annual charity mutt wash on Sunday, June 25 from 11 a.m. - 4 p.m.  The event will be held in the alley next to the Ultimissimo Salon located at 112 Walnut Street in downtown Hudson. Your $25 donation for the dog wash will go to benefit the Hudson Dog Park. HGC will have a table at this event.  Stop by for an update on the progress of the Hudson Grocery Co-op and pick up a treat for your dog. Hope to see you there!

A very special thank you to My Sister's Garden for inviting HGC to come out on Mothers' Day weekend!  Deb Beaudway volunteers at the HGC table talking to visitors about the Co-op.

Grilled Chicken with
Mango Salsa

This vibrant salsa combines sweet mangos, sour lime and spicy jalapenos for spectacular results. It's mouth-wateringly good on chicken or other grilled meats, vegetables, or if you dare, straight out of the salsa bowl.

1/2 cups mango, pitted, peeled and diced
1/4 cup green pepper, diced
1/4 cup red onion, minced
1 Tbsp. jalapeno pepper, diced
1/4 tsp. ground cumin
2 Tbsp. fresh cilantro, minced
Juice of 1 lime
Salt and pepper to taste
2 pounds boneless, skinless chicken breasts (6 breasts)
1 Tbsp. olive oil
To prepare salsa, toss mango, green pepper, onion, jalapeno, cumin and cilantro in a mixing bowl with lime juice and season with salt and pepper. Salsa may be prepared up to a day in advance, to allow flavors to combine.
Preheat the grill to medium high.
Lightly brush the individual chicken breasts with vegetable oil, and season with salt and pepper. Place them on the grill and cook until the juices run clear, about 4-6 minutes on each side. Remove from the heat, let them rest 2 minutes, then place on individual serving plates and top with the salsa.

New owners joining HGC after May 10th will be approved at the June board meeting.
Summer is upon us and the Spring to 500 campaign has just two and a half weeks left. We are ecstatic about having gained 30 new owners and we are working hard to keep the momentum going! One lucky new owner will be the recipient of two tickets to The Phipps and a $50 gift card to Pier 500. If you are already an owner, you can purchase an ownership as a gift and you will be entered into the drawing as well. Spread the word—now is a great time to become a Hudson Grocery Co-op owner!
