Slow Cooker Oatmeal
In March, HGC representatives attended the Up and Coming Co-op conference in Milwaukee. Outpost Natural Foods was the host co-op, and this successful co-op has four locations. If you are in the Milwaukee area, stop by one of their stores. (www.outpost.coop). Here is one of Outpost's most requested recipe.
Ingredients
1 cup milk (soy, rice, cow... your choice)
1 cup coconut milk
1/4 cup brown sugar
1/4 tsp salt
1/2 tsp cinnamon
1 cup organic regular rolled oats (thick rolled will result in a chewier texture but steel cut won't work for this recipe)
1 cup finely chopped apple
1 cup dried cranberries or chopped dates
1/2 cup walnuts or slivered almonds
Directions
1. Grease the inside walls of the crockpot with butter or butter substitute
2. Put all ingredients in and mix to combine
3. Cover and cook on low heat for 8-9 hours
Wake up to the best oatmeal ever!
(serves 6-8)
