Food allergies can be difficult to spot. The response to the body can take 4-72 hours to develop as food moves through your digestive track, so sometimes you simply don’t recognize your health complaints as being related to a food allergy. Symptoms vary from person to person. Sufferers may notice:

... that every time you eat a food you are allergic to, your body releases cortisol, and over time this can weaken your adrenals? Most commonly associated with intense or prolonged stress, adrenal fatigue is a collection of signs and symptoms that results when the adrenal glands function below the necessary level. You may look and act relatively normal with adrenal fatigue and may not have any obvious signs of physical illness, yet you live with a general sense of “brain fog” (unwellness), tiredness or generalized malaise. Elimination Diets

YOU MAY NOT REALIZE IT, BUT ...

the foods you're eating every day could be slowly corrupting your health and shortening your lifespan. But how do you know? For many people, toxic foods are hard to spot, especially for those who've already cleaned up their diets and feel like they are eating healthy. An elimination diet is one way to help determine if you have a food allergy or sensitivity. Please keep in mind that we often recommend complete elimination only for 3-12 months depending on the condition. If an individual is Celiac, we would recommend that they never have exposure to gluten/wheat. The same holds true if one has an IgE (anaphylactic) response.
 
For those with IgG allergies, we often re-introduce the foods back in, very slowly and in small amounts, so the body is able to handle these foods if it gets re-exposed. The key is to heal the digestive lining while eliminating the food, and re-introduce when the lining is stronger.
