Eat Well - Sweet Potato and Black Bean Stew

I went with my parents to one of my favorite restaurants in Durham, NC – Blue Corn Café and had the same sweet potato and black bean stew I always have.  Finally, I decided it was time to try to recreate it at home.  Here’s how I did it

  • 1 sweet potato – scrubbed clean and cut into large chunks
  • 1 box vegetable broth (I use Trader Joe's low sodium)
  • 2-3 Tablespoons tomato paste
  • 1 organic red pepper
  • 6 garlic cloves, sliced or minced and left to sit for ten minutes
  • 1 can BPA free black beans (I use Eden)
  •  Selected spices – I used cumin, curry powder, and red pepper
  • Avocado for garnish
  • Put the sweet potato and garlic into a pan filled with vegetable broth and cook until tender – 20 minutes or so.
  • Add black beans, red pepper, and tomato paste and spices
  • Let simmer for 20 minutes.
  • Scoop into bowl and add avocado slices.
