Be Happy - Find your Tribe
My blog post about My Fourteen Legged Tribe was published in Sensual Appeal this month -- I love all of the many tribes that I am a member of - it was a joy to write about the fourteen legged one! I hope you enjoy it.
1 sweet potato â€“ scrubbed clean and cut into large chunks
1 box vegetable broth (I use Trader Joe's low sodium)
2-3 Tablespoons tomato paste
1 organic red pepper
6 garlic cloves, sliced or minced and left to sit for ten minutes
1 can BPA free black beans (I use Eden)
Selected spices â€“ I used cumin, curry powder, and red pepper
Avocado for garnish
Put the sweet potato and garlic into a pan filled with vegetable broth and cook until tender â€“ 20 minutes or so.
Add black beans, red pepper, and tomato paste and spices
Let simmer for 20 minutes.
Scoop into bowl and add avocado slices.
