Before I discovered this, courtesy of my good friend Florin Itu, I always defaulted to pumpkin and orange soup as my favourite, but now this is my all time favourite pumpkin soup and its really easy too. I usually dont fiddle around with the Green Thai spices but simply use a pre prepared jar.
Its pumpkin season and here are a few of my favourite recipes for you to have a go at

Hummus with pumpkin and pomegranate molasses
I like how the pumpkin makes the hummus taste sweeter and how it changes the texture to be more silky. With the pomegranate molasses dribbled over too its positively sinful!
