April has been a baking, cooking, eventing, catering blur and I hope over Easter I can pen a few recipes for you that capture early Spring ingredients.  here is one thats just brilliant for Easter: an easy peasy boozy Romanianised "Cassata"...grab your "cozonac" tin, soak your Tiramisu fingers in "Tamaioasa Romaneasca " syrup , stir into your  proper "smantana" some "nuci" and dried fruit (and yes if you must some "rahat") ... and leave it overnight.  Finally the ladies in the kitchen approve of what I'm cooking ;)  see it all here cassata romaneasca on my blog.
