Some years ago I was lucky enough to learn how to make real pasta in Emilia Romagna and see parmesan being made and taste truffles and all kinds of good things. I love to use truffles in classic recipes but also I have a zacusca ravioli dish with a walnut tarator sauce that I created to be a little lighter than a traditional creamy sauce, the cocoa in the paparadelle just adds an interesting note to a rich ragu and to add extra depth I put chicken livers in my lasagne. As for truffles in mac and cheese...well comfort food just got more comfy! And now the wines....
