Dear <<First Name>>,

After watching others cull vines and render trees limbless I ventured into the fresh air this week (shock horror) and found myself in a wood carpeted with chervil and watercress.  I gathered them up and returned with the goodies. Combined with some freshly laid (in fact still warm) eggs into a simple omelette , some nettle puree (expertly made according to local tradition…plenty of garlic and thickened with a little flour) some local cheese, bread and a cold beer a fine repast indeed. Really it’s the simple fresh things enjoyed in the moment that work best.

I was talking to somebody today about the importance of good oils and of course nuts are a great source.  Romanian walnuts are great because they are fresh if bought from a market – just don’t be squeamish about any extra protein you might find.  I regularly substitute local walnuts into dishes that call for other types.  A bit of science here

Weekly Menu & Wines by The Glass
I was inspired by St Patricks Day for this week’s menu so find a “colcannon soup” and some soda bread with “dulse” ie seaweed, some lamb cutlets with a minted pea couscous and of course a Guinness, beef & mushroom pie.  Dessert needed to include rhubarb so it’s a white chocolate panna cotta with rhubarb/ginger salsa on top.
Wines have been paired by Rob at Corcova and can be enjoyed by the glass too. Rob will be presenting the wines on Friday evening so please book if you want him to chat through them with you.

Weekend Brunch Sat & Sun   Continuing the Emerald Isle theme I will up the anti and add to our breakfast with some fried colcannon and make some potato farls too and more soda bread.
