Topic: “You Are What You Eat”

French epicure Jean Brillat-Savarin famously said—‘Tell me what you eat and I’ll tell you who you are.’ Food, in other words, is a reflection of the person and the culture in which they live. Food is a dynamic and fascinating lens into who we are as a society and who we are as a people. This presentation will explore the links between food and culture and how developing new foods for the marketplace is just as much a science as it is an exercise in understanding how people live.

Dr. Tara McHugh receives Macy Award

The Minnesota Section of IFT presented Dr. Tara McHugh with the 2016 Harold Macy Food and Science Technology Award, which recognizes outstanding food technology transfer or cooperation between scientists. Dr. McHugh had the opportunity to present “Innovative Food Processing for Fruits and Vegetables” to the section members and will also receive an honorarium. The award, which was established in 1981, honors Harold Macy, Dean Emeritus of the University of Minnesota and a founding member of IFT.

Dr. McHugh, a professional member of IFT, is a Team Leader at the USDA Western Regional ARS in Albany CA. Her research focuses is on developing innovative food processing technology in conjunction with industry and academia to produce commercially viable new fruit and vegetable products.  Several of her patents have received commercial success.  Of particular interest in the presentation was the use of ultra violet light to increase the Vitamin D levels in mushrooms.  This topic sparked a lot of discussion at the meeting.

Meet Your MN IFT Executive Committee - Gary Reineccius
Gary Reineccius, Ph.D., is a Professor and past Department Head in the Department of Food Science and Nutrition at the University of Minnesota. He has been actively involved in flavor research for more that 45 years. During this time he has published over 230 research articles. Gary's achievements have been recognized by several local and international organizations including the Stephen S Chang Award by IFT, the Palmer Award by the Minnesota Chromatography Forum, and has been made a Fellow by the American Chemical Society. Gary has been an active IFT member over the years but has been most involved with the MN section beginning in 2008. He served as the MN IFT Chair in 2014-2015 and currently serves on the Executive Board as Past Chair. He has also been a speaker within IFT on several occasions.
