Be on the look out for juicy cantaloupe and sweet corn this month! Blackberries, strawberries, blueberries, and raspberries will still be going strong too. And those big, ripe peaches that you’ve been waiting for all year should finally be ready by August as well. Expect to also find lots of summer squash, eggplant, and green beans.

Check out our Seasonal Eats recipe below to learn how to make an easy summer eggplant salad. You can also get tips for transforming all of these fresh market ingredients into a magnificent meal in person by joining us at our Cooking Demo on August 15th at 6:00 pm next to the music tent! Chefs from Rosswood Restaurant will teach you how to make a delicious dish (and you’ll get to try it too)!
August 4th - 10th, 2019 is National Farmers Market Week, but we’re keeping the celebration going all month long! We know you love supporting your local farmers, and this month is all about showing off your market pride.

Free temporary “I Heart Farmers Markets” tattoos will be available at the information booth all month long; put them on yourself, your dog, your zucchini... anywhere you can! Don’t forget to post your fun pictures to Instagram and use the hashtag #southwaterfrontfarmersmarket.
Best Friends Veterinary Medical Center will be giving away 100 $1 Market Bucks, which work like cash with all of our vendors, to the first 100 visitors at their booth on August 29th!

Stay tuned for more t-shirt and market buck giveaways in the coming months as well!

½ cup extra virgin olive oil
3 tablespoons lemon juice
¾ teaspoon kosher salt
½ teaspoon black pepper
1 ¾ pounds eggplant, trimmed and cut into 1-inch chunks
3 ounces feta cheese, crumbled (about 2/3 cup)
1 clove garlic, minced
1 tablespoon capers, chopped
1 pound mixed bell peppers, seeded and cut into 1-inch pieces
1 cup cherry tomatoes, halved
1/4 cup fresh mint leaves

Preheat oven to 425 °F.

Whisk together the oil, lemon juice, salt and pepper.
Instructions (continued):
Toss eggplant with 1/3 cup vinaigrette, reserving the rest.

Arrange on a baking sheet. Bake, tossing occasionally, until tender and golden around edges, about 30 minutes.

Let eggplant cool somewhat. (It can be warm but not hot enough to melt feta or wilt mint.)

Whisk feta, garlic and capers into reserved vinaigrette.

In a large bowl, combine eggplant, peppers, tomatoes and mint leaves. Toss with vinaigrette, and serve immediately or within several hours. (It holds up all day.)
