What is your most essential kitchen item?: Tasting spoons are essential for everything we do in the kitchen.

When you are designing a meal or dish, what factors do you take into consideration?: I take item availability into consideration when planning new menu items. Having good relationships with our local farmers helps out tremendously!

If you had to eat one thing for a week straight, what would it be?: I could eat Bone Marrow for a week straight! Although my heart might stop,I find it utterly delicious! With the right components and balance, it is Heaven.

Have the tastes of guests changed during your career?: Our guests palates have changed over the years with the culinary trends. For example, Charcuterie used to be a "niche" item and now people are more eager to try new preparations.

When you cook at home, do you follow a recipe?: I never follow a recipe at home (unless I am baking). I try and use some items from our garden, and grill proteins as much as the weather will allow.

If you could choose your last meal what would it be?: My mother's stuffed shells! It's a classic Italian American dish that is so heartwarming it will make you quiver! It is the perfect blend of flavors.
