While 2020 was a challenging year for many families and businesses in the communities we serve, it was equally challenging for the Bank employees to quickly adapt to and successfully navigate newly introduced safety protocols to protect not only our Clients, but equally important to protect our own families, while maintaining our community bank culture.  Even though 2020 proved to be a challenging year for most, Peoples First Savings Bank experienced many positives.  Due to our continued focus and consistent delivery of our community banking approach in 2020, the Bank responded to a record number of loan requests, despite the pandemic.

With 2020 in our rearview mirror, we anticipate that 2021 will bring its own unique set of challenges for the Peoples First Savings Bank family of employees to successfully navigate.  Concurrent with the continued rollout of vaccines and additional economic stimulus, the U.S. remains optimistic in a recovering labor market, leading to the continued re-opening of the economy.  Many expect that this will result in increased inflation, thereby putting pressure on long term borrowing rates.  However, interest rates on single-family owner occupied real estate remain near historic lows and for those who did not evaluate the interest rate position on their home mortgage in 2020, it is not too late to inquire.  Employees throughout the Bank remain committed to a high level of responsiveness and flexibility in developing a solution to meet the ongoing financial needs of our clients in good times and bad.

BAKED POTATO SOUP
This Baked Potato Soup has a thick and creamy broth that's loaded with bacon and chives, cheddar cheese, sour cream, and smooth potatoes. It's the ultimate comfort food and so easy to make!
 

Ingredients

  • 4 large russet potatoes, equal to 2 lbs.
  • ¾ teaspoon salt
  • 6 slices thick cut bacon
  • 1 large yellow onion
  • 3 cloves garlic, minced
  • 2 Tablespoon butter
  • ¼ cup flour
  • 3 cups Chicken broth
  • 2 cups half and half
  • ¾ cup sour cream
  • ½ teaspoon pepper
  • 2 cups shredded cheddar cheese
  • 1/8 cup chives, finely diced

Instructions

Prep Work
  • Shred the cheese from a block, measure out the sour cream and half and half. Let them all sit out at room temperature.
Cooking Instructions
  • Cut the bacon into 1-inch squares with kitchen shears. Cook in a large pot over low heat, rotating occasionally. They’ll overlap at first but will shrink down as they cook. Remove and set aside once crisp. Leave 2 Tablespoons of drippings in the pot.
  • While the bacon cooks, peel the potatoes and cut them into 1-inch cubes. Add to a stock pot and cover the potatoes with 1 inch of water. Add the salt and boil gently for 10 minutes or until fork tender. Drain, then gently mash. Set aside.
  • Add the diced onion to the pot with the bacon drippings and cook until softened, about 5 minutes.
  • Add garlic and butter and cook 1 more minute.
  • Whisk in flour, use a silicone spatula to stir as the flour cooks for 1 full minute to remove the raw flour taste.
  • Add the chicken broth. Use a silicone spatula to loosen any bacon remnants from the bottom of the pot, this will add flavor.
  • Slowly add the half and half. Bring to a boil, then reduce to a simmer.
  • Stir in the potatoes, then mix in the sour cream, and pepper.
  • Remove from heat. If desired, blend with an immersion blender or transfer it to a blender in batches. (I prefer to do this for a creamier and smoother consistency.)
  • Gradually sprinkle with shredded cheese and stir until combined. Make sure the base of the soup isn’t too hot or the cheese won’t melt creamy and smooth. The soup will continue to thicken as it sits.
  • Garnish with green onions and bacon, serve!

NO BAKE SUMMER BERRY LASAGNA

Ingredients
For Whipped Cream:
  • 1 and 2/3 cup heavy cream-chilled
  • about 1/3 cup powdered sugar (to taste)
  • 1 teaspoon vanilla
Red Velvet Crust:
  • 3 cups graham cracker crumbs
  • ¼ cup strawberry jam
  • ½ cup+ 2 tablespoons unsalted butter-melted
  • Red gel food coloring
For Cheesecake Layer:
  • ½ cup unsalted butter-softened
  • 8 oz. cream cheese-softened
  • 1 cup powdered sugar
  • 1 teaspoon vanilla
  • 2/3 cup diced fresh strawberries
  • 1 cup of whipped cream
For Blueberry Jello Salad Layer:
  • 2 (3 oz.pckg) berry blue Jello (or other flavor to your taste)
  • 1 and 1/4 cup boiling water
  • 2 cups blueberry pie filling
  • 1 cup of canned crushed pineapple-drained from juice (if use pineapple chunks, pulse it in a food processor to get fine crushed pieces)
Topping:
  • 2 ½ cups whipped cream
  • Fresh strawberries halved
  • Fresh blueberries
  • ¼ cup chocolate chips
Instructions
To make the crust:
  1. Combine graham cracker crumbs, strawberry jam, melted butter and red food coloring( drop the color directly in melted butter or jam, it will dissolve better).
  2. Mix until evenly moistened. Press the mixture in the bottom of 13 x 9 x 2 inch dish. Place the crust in the freezer to firm.
Filling:
  1. First, make the whipped cream. In a bowl beat chilled heavy cream until soft peaks form. Add powdered sugar and vanilla and continue mixing until really STIFF peaks form. Measure out 1 cup of beaten whipped cream for cheesecake layer. Cover remaining whipped cream and reserve for topping.
  2. To make cheesecake layer cream together softened cream cheese, powdered sugar, vanilla and softened butter. Mix in 1 cup of whipped cream(do not use soft whipped cream, cheesecake filling have to be thick or it won’t hold dense blueberry jello salad layer on top)
  3. Gently fold in diced strawberries and spread over the crust. Place in the fridge to set.
  4. To make the blueberry jello salad layer in a large bowl place 6 oz. berry blue Jello gelatin mixture. Pour 1 ¼ cup boiling water and stir for a few minutes until the gelatin dissolved completely. Set aside to cool for 15-20 minutes, then stir in crushed pineapple and blueberry pie filling. Wait until it’s cooled to room temperature and soft set, or place in the fridge to speed the process but stir from time to time.
  5. Spread blueberry jello layer over chilled cheesecake layer. Do not pour warm blueberry jello over cheesecake layer, it will melt it.
  6. Place in the fridge to chill until jello layer is set completely .
  7. Top with remaining whipped cream. Before serving arrange fresh berries on top. Melt white chocolate chips, transfer melted chocolate to a ziplock bag, cut off the corner and drizzle over the top of lasagna.
  8. Store in the fridge.
